Hi everyone…. I know I haven't updated my blog in a long time but it's all going to change today J
Especially for Valentine's Day I am preparing strawberry tartlets in the shape of hearts….. (about 6 heart shaped tartlets)
So let's begin….
For the dough you are going to need 150 gr of butter, 150 gr powdered sugar, 60 gr eggs (I know it's annoying, an egg is roughly 50 gr so it's a little more), 60 gr ground almonds and 300 gr of flour.
Combine butter, Sugar, eggs and almonds (you can add some vanilla if you like, I did…). Do not over work. Add the egg and work the dough until you have a smooth ball. Wrap in plastic and cool in the fridge.
Remove the dough from the fridge, roll on floured surface and place inside the heart shaped tartlet mold. Refrigerate.
Bake the shells at 180° Celsius for 10 minutes with aluminum paper and pie weights, remove the aluminum paper and weights and bake an additional 10 minutes. Cool on wrack.
Prepare the pastry cream. You will need 500 ml of milk (which is 500 gr of milk), 125 gr sugar, 4 egg yolks, 30 gr custard powder (or cornstarch) and 30 gr of flour.
Put most of the milk in a medium saucepan on medium heat. Combine the eggs and sugar and whisk immediately. Add the flour and combine. Add the custard powder and combine. Add the small amount off milk you set aside to the bowl – that will make it easier to mix. When the milk is starts to boil remove it from the heat and pour half of it to the bowl with all the ingredients and whisk. Poor the mixture back in the saucepan and whisk non stop over medium heat until the mixture thickens (this will take a few minutes). Poor the pastry cream to a bowl and let it cool a few minutes. Wrap with plastic wrap so that the plastic is on the surface of the cream and refrigerate.
Fill the baked tart shells with pastry cream and cut up strawberries for the top and have a happy Valentine's Day J
