Today I am making Pecan Squares. These are small (very sweet) crunchy squares that will fill you up with happiness as you bite into the caramelized pecans…  

(Recipe: Carine Goren).

For the dough you will need: 100 gr of butter (cut into cubes), 1/4 cup of sugar, 1 heaping cup of all purpose flour, 1 teaspoon of vanilla extract, a pinch of salt and 2-3 tablespoons of milk.

 

 

Note: The original recipe call for the sugar in the dough to be white but I was out so I used brown sugar which made my dough a bit beige but equally yammy…

 

Combine all the ingredients (except the milk) in a food processor (or a simple bowl) and process until the mixture resembles crumbs. Add the milk and combine till you have smooth dough.

Flatten the dough onto a 20 cm by 20 cm square pan fitted with a baking sheet(approximately 8 inch by 8 inch pan) using your hands and poke the dough using a fork.

 

 

Bake for 10-15 minutes in 180 degrees Celsius until the dough is lightly golden.

Take out of the oven (but leave the oven on).

To make the filling you're going to need: 150 gr of butter, 1/3 cup of honey, 2 tablespoons of heavy cream, 3/4 cup of firmly packed dark brown sugar and 300 gr of pecans.

 

 

In a small saucepan combine the filling ingredient (except the pecans) over medium heat until all the butter has melted. Bring to a boil for 1-2 minutes over high heat. Remove from the heat and pour in the pecans.

Pour on the baked dough.

 

 

Bake for an additional 15-20 minutes.

Remove from the oven and cool completely at room temperature (at least 2 hours).

 

 

Move the pan the refrigerator for an additional 2 hours (this will make it easy to cut the pecans into squares).

Remove from the pan (use the baking sheet to help you remove it).

 

 

Cut into squares….

 

 

And eat….  (or store in an airtight container at room temperature)
