Recipe adapted from Le Cordon Bleu
This is one of my favorite recipes, small butter tea cakes are the best!
3 eggs
130 granulated sugar
30 gr honey
60 ml milk
200 gr butter
200 gr flour
10 gr baking powder
1 vanilla pod
Peel of 1 lemon
Melt the butter in a small pan. In a small bowl mix together the flour, baking powder, lemon zest and the pods from 1 vanilla bean set aside.
In a large bowl whisk the eggs and sugar. Add the honey, milk and then add the flour mixture.
Pour the hot melted butter and whisk well until all the ingredients are combined. Refrigerate the mixture for 2 hours and preferably overnight.
Preheat oven to 230 degrees Celsius with turbo mode.
Brush your madeleine mold with softened butter and dust with a layer of flour, remove the excess flour.
Pour the batter into a piping bag with an 8 size tip. Fill the molds ¾ full.
As soon as you place the madeleines in the oven reduce the heat to 160. Once the dough spreads in the mold, turn off the turbo. As soon as the madeleines head pops out turn the turbo back on. Bake for about 10-15 minutes.
Once the madeleines are cooled, dust them with some powder sugar and enjoy….
